I used green beans, corn, lima beans, green peas, carrots, celery, onions and diced tomatoes for the vegetables in this soup. If you aren't a fan of any of these, just swap it out for your favorite veggie. Okra, field peas, squash - whatever you like, toss it in!
This makes a TON of soup. We ate this for dinner and leftover for lunch the next day. We still had some soup leftover, so I froze it for a quick meal later.

Slow Cooker Bacon Wrapped Pork Loin Recipe - fancy enough for a dinner party but easy enough for a weeknight meal! Pork loin seasoned with garlic, rosemary, red pepper flakes, salt and pepper and wrapped in bacon. Top the pork with a quick dijon fig glaze for a restaurant quality meal!!! Pop the cooked pork loin under the broiler to crisp up the bacon. Everybody LOVED this easy slow cooker pork recipe!!
Pork wrapped in more pork? Where do I sign up? This Slow Cooker Bacon Wrapped Pork Loin was incredibly delicious! It is fancy enough for a dinner party and easy enough for a weeknight meal. Just season the pork loin with some garlic, rosemary, salt and pepper and wrap it in bacon. It takes about 5 minutes to prep the pork for the slow cooker.
We loved this Slow Cooker Bacon Wrapped Pork Loin. It reminded us a lot of our favorite porchetta appetizer. That appetizer is served with a fig jam. It is amazing. Since the pork loin had the flavors of porchetta, I decided to add a simple dijon fig jam glaze to the slow cooker. OMG! SO good! Make sure you spoon some of those yummy juices over the cooked pork loin. You don't want to waste them!
The bacon wrapped around the pork loin will be fully cooked when the pork loin is done. BUT it won't be crispy. I carefully took the pork loin out of the slow cooker and popped it under the broiler for a few minutes until the bacon was nice and crispy. That is totally optional, but I think it tastes (and looks) better.CLICK FOR MORE-->
